Today, in many countries, the classification of grains is based on four criteria: bushel weight, moisture content, percentage of broken foreign matter or fragments, and damaged grains.

For grains, bushel weight is known as volumetric weight and is a traditional criterion used to determine grain bulk density. This criterion is an indicator of overall grain quality. The higher the bushel weight, the better the grain. Bushel weight is affected by many factors, including moisture content, frost damage and maturity, growing and harvesting conditions, and drying conditions.

Moisture content is also an important factor in grain quality. Moisture content refers to the percentage of water per unit mass of grain. In fact, moisture content does not directly affect grain quality. However, if the humidity is above the recommended value for storage, the quality will decrease.

Foreign materials in grain content are foreign materials that pollute the grain such as sand, soil, plastic, metal and glass fragments. In the grain trade, the presence of foreign content above a certain rate reduces the quality.

Damaged grains are an important grading factor. For example, in order for wheat to be of first quality, it should not contain more than 4 per thousand of the total weight of damaged grain.
